Sarah Bean from Raising Human Beans is on a mission to make her family healthier, and yours too. And to do that, she has created several healthy muffin recipes that everyone will love!! Not only are these recipes perfect for springing into healthy eating, but they are great any time of the year.

For each recipe, she will give a sugar free and low sugar option and her opinions on each. Keep reading to find out how you, too, can add delicious desserts to your kitchen table without adding the pounds.

Now for the recipes.

There are 3 base recipes that I have created. And as you will see, the only variations are in the wet ingredients. Meaning, the dry ingredients will almost always be the same- unless I switch out a type of flour, add sugar, or a mix-in.

Tip 1-

(By the way, one thing you should know up front- I don’t consider adding honey to be adding sugar. I know, I know… it is sort of sugar- BUT the benefits outweigh that for me. Consequently, some sugar free recipes may have honey added- but most won’t.)

Tip 2-

Sub 1/2 cup of flour for oats

Tip 3-

For a low Sugar Option, add 1/4 cup honey or sugar.

Healthy Muffin Recipes Base #1- The Basic Apple Muffin.

Certainly, you have all heard of Plain muffins? Well, this is the plainest you will get without the muffins being totally bland. I used this recipe as a test recipe, to decide if making sugar free muffins was possible. As a result, the Plain apple muffin was born!

This is the base recipe for Carrot Cake Muffins, Apple Cinnamon Muffins, Poppyseed Muffins, and more should I choose to develop more Healthy Muffin Recipes.

Healthy Muffin Recipes Base#1 Apple

  • Servings: Makes 12 regular, 6 Jumbo, or 24 mini.

A Healthy Muffin Recipe that uses only apples as sweetness, and is a base for many healthy muffin recipes.


Add honey if desired.

Ingredients

Dry Ingredients:

  1. 2 Cups Wheat Flour
  2. 1tbsp Baking Powder
  3. Pinch Salt

Wet Ingredients:

  1. 1/2 Cup Applesauce (Homemade)
  2. 1 Cup milk
  3. 2 Eggs

Directions

  1. In a medium bowl, mix together dry ingredients.
  2. Then in a liquid measuring cup; Add the milk, applesauce and eggs. Whisk.
  3. Mix together.
  4. Add to greased muffin tins, or liners.
  5. Bake at 375 for 15-18 minutes.

Makes 12 regular, 6 Jumbo, or 24 mini.

This is the base recipe for Green Hulk muffins, Banana nut muffins, Chocolate Banana Muffins, and Peanutbutter Muffins- and more should I choose to develop more Healthy Muffin Recipes.

I am sure, you have all heard of Yogurt muffins? As a result of the Pinterest recipes I see all of the time; I decided to make a low sugar Base for muffins. However, you could make it sugar free by making your own yogurt!

This is the base recipe for Any kind of Berry Muffin, Carrot Cake Muffins- and more should I choose to develop more Healthy Muffin Recipes.

Healthy Muffin Recipes #1 The Green Hulk or Leprechaun Muffin

My son loooooooves Green hulk. I mean, so much that he thinks to be the Hulk he has to be shirtless. All. The. Time. He even tried to take his shirt off in the library once!! Oh man, that was… interesting and so funny.

So I am always trying to find new ways to get my kids to eat vegetables, outside of dinner. And Ta Da! The Green Hulk Muffins Were born.

My favorite muffin happens to be Banana Nut. And because they are soooo good, I let myself put walnuts in them. One thing you should know about me- is unless they are in brownies or muffins, I do not like Walnuts.

So this muffin is the perfect excuse to have bananas, and walnuts.

  4. 1 tbsp Pumpkin Spice

Wet Ingredients:

  1. 1/2 cup applesauce or yogurt (Vanilla)
  2. 1 Cup milk
  3. 2 Eggs
  4. 1/2 Cup Shredded Carrot

Optional mixins:

1/2 Cup raisins

or

1/2 Cup nuts

Directions

  1. First, In a medium bowl, mix together dry ingredients.
  2. After that- in a liquid measuring cup; Add the milk, applesauce or yogurt, and eggs. Whisk.

For my birthday, I got Jumbo Muffin tins so that I could make Costco Muffins at home! Naturally the first kind I made was Poppyseed.

As a result, I decided to make a low sugar version- so this recipe does contain sugar.

Wet Ingredients:

  1. 1/2 Cup Applesauce (Homemade)

  3. 2 Eggs
  4. 2tsp Almond Extract

Directions

  1. In a medium bowl, mix together dry ingredients.

    1. I have not found that it changes the texture! You need to let these fully cool before taking them out of a wrapper, if you use one.
      Our favorites are the Green, and Chocolate Banana!
